He starts with the best local ingredients and produces in small batches, extruding each shape through bronze dies to create a rough texture that clings to your sauce. Made with Shepherd’s Grain Un-enriched semolina flour, which is from a co-operative of “Food Alliance” certified family growers following best farming practices by protecting the land with no-till, direct seed farming methods.
